A smokehouse on Gulick Rd. is the southern-most cobblestone structure in this area. It is unique in that mortar holds the stones together only on the inner surface. This made the structure air-tight without the necessity of having mortar between the length of the stones. The quoins are held together by mortar at their points of contact, but this mortar appears to be recent. The smokehouse at Hop-1a Smokehouse has some of the same structural characteristics. When the smokehouse was restored, mortar was applied to the exterior.
